Ingredients:

  • 4 large overripe bananas (mashed)
  • 250g all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt
  • 125g granulated sugar
  • 250g unsalted butter (softened)
  • 4 large eggs
  • 1 tsp banana flavoring
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup evaporated milk (optional)

  1. Preheat & Prepare Pans: Preheat your oven to 175°C (350°F) and grease and line two 9-inch round cake pans.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. Mix Wet Ingredients: In another large mixing bowl, beat mashed bananas, sugar, and butter until creamy. Add eggs one at a time, beating well after each addition.
  4. Combine Wet & Dry Ingredients: Gradually fold the dry mixture into the wet mixture until just combined. Do not overmix. If using, gently fold in chopped walnuts.
  5. Bake: Divide the batter evenly between the prepared cake pans. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.
